RECIPE: Ice Cream Crispy Dessert


No matter how old you get, there is something about having a bit of ice cream on a hot summer’s day. Cool, refreshing…and kind of makes you feel young again. Here is a great recipe for a cool dessert that you can serve at home, take to a party or simply surprise all of the neighborhood kids with on a hot afternoon. If you are heading out to a large party, you might want to double the recipe because everyone will want to try some of this!

Ice Cream Crispy Dessert

1/2 cup butter

1 cup brown sugar

2 1/2 cups Rice Krispies

1 c coconut

1/2 cup mini chocolate chips (optional)

1/2 gallon vanilla ice cream, slightly softened to scoop

In a saucepan, melt the butter and the brown sugar. Bring it to a boil and then remove from heat.

In a large bowl, measure the Rice Krispies and the coconut. Pour the butter and sugar mixture over top. Stir well.

In a 9×9 pan, press half of the Rice Krispie mixture in to the bottom of the pan. Scoop softened ice cream over cereal mixture. Place about 2″ deep of ice cream. Place in the freezer for thirty minutes.

Press the rest of the cereal mixture over the top. Garnish with mini chocolate chips if desired. Place in the freezer until 15 minutes before serving. Remove from the freezer to soften slightly before cutting in to pieces.
