Manicotti Recipe


manicotta recipeDo you happen to live in the midwest or the east coast, where the weather has just been a drag? What was supposed to be a great spring has turned in to a cool, soggy and even stormy season. If it happens to be a rainy and dreary day near you, here is a great pick me up dinner recipe for manicotti. This manicotti recipe is hearty, fairly easy to make and will make you (almost) forget about the yucky weather outside.

Manicotti Recipe

1/2 lb. ground beef

1 clove of garlic, crushed

1 cup cottage cheese

4 oz shredded mozzarella

1/2 tsp salt

1/2 c mayonnaise

manicotti noodles

16 oz spaghetti sauce

In a large pot, cook the manicotti noodles. Set aside to cool when they are soft.

Carefully, using a teaspoon, scoop the mixture inside of the manicotti noodles. Fill the noodles until they are approximately 3/4 of the way full. Lay the stuffed noodles in to a greased 9×13 pan. If there is extra of the mixture, sprinkle it over the top of the noodles. Pour the spaghetti sauce over the top of the noodles evenly. Sprinkle with oregano and parmesean cheese. Cover with aluminum foil.

Cook for 30 minutes in a 325 degree oven. Remove the foil and place in the oven for another 20 – 30 minutes, or until the cheese starts to turn light brown and the sauce bubbles.

Serve with garlic bread and vegetables.

In a frying pan, add ground beef and garlic. Saute until the beef is completely cooked and th egarlic is soft. Add cheeses, salt and the mayo to the meat mixture. Stir it well.
