Cowboy (Chocolate Chip) Cookie Recipe

Here is an old recipe for cookies, but it is a good one! This chocolate chip cookie recipe is a bit healthier, with the addition of oatmeal in to it. Or at least we can use that as an excuse to eat a whole bunch of these cookies and feel better about it. The Cowboy Cookie recipe is a crispy version of the traditional chocolate chip recipe.





Cowboy (Chocolate Chip) Cookie Recipe

2 c flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

1 c shortening (no substitutions)

1 c brown sugar

1 c white sugar

2 eggs

1 tsp vanilla

1 c oatmeal

1 pkg semi-sweet chocolate chips

In a large bowl, combine the flour, soda, salt and powder.

In a separate bowl, mix the shortening and the sugars. Blend until creamy. Gradually add the eggs and vanilla in with the sugars, mixing constantly. Pour in the oatmeal and chocolate chips. Mix until combined.

Slowly add the flour mixture to the bowl and stir only until mixed. Do not overmix.

Drop the cookies on to a greased cookie sheet by a teaspoon. Bake for 15 minutes in a 350 degree oven. One batch makes approximately three dozen cookies.

These Cowboy Cookies are great when they are warm and served with milk as an after school snack!
