Cinco de Mayo Margarita Cake Recipe

margarita cake recipeThis recipe offers some fun for your Cinco de Mayo party, without the alcohol. The bright colored cake is tasty, yet not heavy in its sweetness. The cake can be made in a 9 x 13 pan or even a sheet cake if you have a large crowd coming over for your party.

Margarita Cake Ingredients

1 boxed white cake mix (with eggs and oil according to box instructions)

3/4 c strawberry flavored margarita mix (WITHOUT alcohol)

8 oz whipped topping, thawed (use 16 oz if you made sheet cake size)

sliced strawberries

In a bowl, add cake mix, margarita flavor and 1/2 cup of water. Slowly add in the eggs and oil and mix all the ingredients until combined.

Spray the bottom of the cake pan with non-stick cooking spray. Pour the batter in and place in a 350 degree oven. Bake for 20 – 30 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Remove the cake from the oven and allow to cool completely. Once the cake is cool, cover with thawed whipped topping. Garnish with the sliced strawberries if desired. Keep any uneaten cake refrgerated, but it won’t last long!

Serve the cake as dessert to your celebration dinner or as a sweet treat at a party. And make sure to take copies of the recipe if you go somewhere, as eveyone will request it!
