RECIPE: Super Southwestern Salad

Don’t have a trip going south or over the border anytime soon? Here’s a way to bring a touch of southwest to your tastebuds for lunch or even dinner tonight. This yummy salad can be spiced up if you like it hot or left as is for a tasty mild to medium flavor. Can be made for a large gathering or stored in the fridge to eat for several days.

Southwestern Salad Ingredients:

3/4 c ranch salad dressing

2 tsp taco seasoning

1 jalepeno pepper, seeded and chopped

1 tbsp lime juice

1/2 c sliced, ripe olives

1 c diced red bell peppers

1 pkg romaine lettuce, torn in to pieces

1 c  black beans

1/2 c whole kernel corn

2 c cooked chicken, diced

1 ripe avocado, peeled, seeded and diced


In a small dish, mix jalepeno pepper, ranch dressing, taco seasoning and lime juice. Store in an airtight dish until ready to use.

In a large bowl or platter, layer the lettuce on the bottom. Then layer on the chicken, beans, corn, peppers and olives. Drizzle the dressing over the top of the entire salad or leave it in a gravy boat with a ladle to pour over individual bowls. Refrigerate any leftovers and use within a day before it gets soggy.
