RECIPE: Baked Wet Burritos

Have you been craving a bit of Mexican food lately? This delicious and easy to make ahead meal will satisfy your craving and keep you filled up for hours!


soft flour tortillas

2 pounds ground beef, cooked and drained

1 package taco seasoning or burrito seasoning

1 large can enchilada sauce

1 bag shredded cheddar cheese

chopped onions

chopped lettuce

chopped peppers

chopped olives

cooked and prepared Spanish rice – optional

refried beans


In a large pan, brown the ground beef. Drain it and add the seasoning packet according to directions. Keep warm in a pan while you assemble the burritos.

Lightly spray a 9 x 13 pan with spray butter. Coat the bottom of the pan with enchilada sauce before placing burritos in it.

Take one tortilla, fill with a scoop of ground beef, Spanish rice or refried beans. Add in diced onions, peppers and tomatoes if desired. All ingredients can be mixed and matched according to what each person likes in their burrito. Mark specific burritos with toothpicks to tell whose is who when you remove from the oven.

Sprinkle shredded cheese over the top of the ingredients. Add a tablespoon of enchilada sauce inside the burrito before rolling it up.  Roll up one end of the burrito and then roll up from the side until it is tightly contained. Place the burrito in the pan shortwise and continue making the desired amount of burritos. Push burritos in tightly, usually 5 – 8 can fit across, unless they are super stuffed!  Once all the burritos are in and marked with toothpicks, cover with the rest of the enchilada sauce. Sprinkle shredded cheese over the top and place aluminum foil over the top of the pan.

Place in the 350 degree oven for approximately 15 – 20 minutes with the cover still on the dish. The foil can be removed for the last five minutes to brown the cheese if desiired. Remove from oven and place the burritos on plates. Garnish and serve with more lettuce, onions, tomatoes, olives, sour cream and cheese if desired.

The baked wet burritos can be made ahead of time and stored in the fridge, just don’t pour the the enchilada sauce over the top until you are ready to bake them or else they get soggy. The burritos can be made as mild or as spicy as each individual in your family likes. Make it a Mexican night so everyone can make their own burrito just how they like it, but still eat as a family at home!
