Warm Up With Broccoli Cheese Soup


If you live anywhere on the East Coast, you are probably sick and tired of being cooped up with more snow than you care to see each year. The rest of the country seems to be enjoying a regular winter, but still, it’s winter and it is cold outside. How can you give yourself a little bit of happiness to get through all of the snow and cold temps that have bee filling your life lately? Make a bowl of scrumptious soup to enjoy for lunch or dinner!

Soup is fairly easy to make and it can even have some great health benefits for you. Making a pot of soup from scratch is much more satisfying and tasty than if you were to just grab a can and warm it up. It might take a few minutes longer or even some planning ahead to have the right ingredients on hand, but it is worth it!

This recipe is for hearty broccoli and cheese soup, which will warm you up on the inside and keep you full for hours.

Ingredients:

8 oz processed cheese block

14 oz chicken broth

9 oz chopped broccoli

1 c milk

2 tbsp margarine or butter

1 c diced carrots

1//2 c diced onion

2 tbsp flour

Directions:

Begin by chopping up all of your vegetables. In a large skillet over medium heat, combine the carrots and onions with butter. Sauté until they are tender and light brown. In a large saucepan, place the sautéed mixture and the remaining ingredients over medium to low heat. Keep stirring and make sure the soup does not get to a boil. If it reaches a boil, the consistency will become too runny and not thick.

Stir the ingredients together until they are warmed though and the broccoli is soft – without boiling. Remove from heat and serve in a bowl. The soup tastes great with crackers.

If you so desire, you can also pour the broccoli and cheese soup in a bread bowl. Buy a specially designed bread bowl or simply a round loaf of bread from a bakery. Slice off the top and then hollow out the insides. Pour warm soup inside and enjoy.

This soup is great for you because you get the vitamins from the carrots and the broccoli and the benefits of dairy from the cheese and milk. If you wish to reduce the calories within the recipe, you may use a light or low-fat processed cheese block. Skim milk also cuts calories in place of whole milk.

  1. Soups are very healthy and Broccoli is a super food there combination makes up for a complete healthy dish. I am so making this soup when winters hit my country. =)
