Food and Fitness: Vietnamese Shrimp & Glass Noodle Salad With a Side of Push Ups

Vietnamese Dressing

What you will need:

2 cloves of garlic, minced or crushed

2 fresh long red chiles, seeded and finely diced

2 tablespoons of finely minced ginger

4 tablespoons of fish sauce (nam pla)

1 lime, juiced

4 tablespoons of water

1 tablespoon of sugar

2 teaspoons of groundnut oil

1 teaspoon of sesame oil

How to make the dressing:
All you have to do is mix all of these ingredients together and stick it in the fridge!  It’s as easy as that.


What you will need:
8 ounces of cooked, small shrimp

6 ounces of glass noodles

4 ounces of sugar snap peas

4 ounces of bean sprouts

3 scallions, sliced into thin circles

½ cup of finely chopped fresh cilantro leaves (to garnish)

How to make the salad:
Marinate the shrimp in the salad dressing

Boil water and then soak the noodles in it

Refresh noodles by putting them in cold water and then drain them
Throw the sugar snap peas and the bean sprouts into a strainer and pour the boiling water over it then rinse them with cold water

Mix up the marinated shrimp with the scallions, sugar snaps, noodles, and bean sprouts

Add more of the salad dressing if you would like

Put some cilantro on the top and toss it all up

Serve to the starving family!

Wall Push Ups

This exercise will keep you off of the floor but still help your grow stronger with push ups.  Simply stand with your legs apart, (not too far but in a comfortable zone) and then lean in towards the wall making sure your hands catch you.  If you are just starting out, be sure to push your upper body up slowly.  Never let your hands leave the wall.  Continue doing this until you feel you have reached the maximum amount you can do.
