Food and Fitness: Pork Slider With a Side of Lunges


Spicy Pork Sliders

Ingredients

o   1 lb pork tenderloin

o   2 t canola oil

o   1 t cumin

o   1 t dried oregano

o   1 t chili powder

o   1/4 t salt

o   freshly ground black pepper

o   1/3 cup yellow mustard

o   2 T sweet relish

o   1 T minced shallot

o   12 2-inch slider or King’s Hawaiian rolls

o   3 sli reduced-fat Swiss cheese, each cut into 4 triangles

o   3/4 cup jarred roasted red bell peppers, patted dry and thinly sliced

o   5 large romaine leaves, ribs removed, cut into 2-inch strips

Directions

Preheat oven to 450°F. Place pork on a baking sheet and rub with oil, spices, salt, and pepper. Roast until internal temperature reaches 155°F on a meat thermometer, about 20 minutes; cool. Stir together mustard, relish, and shallot. (You can refrigerate the pork and sauce for up to 2 days.)

When ready to assemble sandwiches, thinly slice pork. Spread each roll with 2 teaspoons mustard mixture. Add pork, cheese, peppers, and lettuce. (Heat briefly to melt cheese, if desired.) Serve or cover and chill for up to 2 hours; bring to room temperature before serving.

You can never go wrong with cute little sliders!  They’ll make the whole family want to eat healthy.

Preparation

Stand with dumbbells grasped to sides.

Execution

Lunge forward with first leg. Land on heel then forefoot.
Lower your body by flexing knee and hip of front leg until knee of rear leg is almost in contact with floor.
Return to original standing position by forcibly extending hip and knee of forward leg.
Repeat by alternating lunge with opposite leg.

Don’t forget that you can never push your knee past your ankle while doing lunges or you will damage your body!
